You are correct that for a two-terminal device, the current direction is defined as flowing from the first node to the second node. Consequently, to probe the current flowing out of the ‘+’ (first node) of a voltage source, you must use -I(V1). For a current source, the first node is labeled as ‘-’ in the symbol; therefore, to probe the current flowing out of the ‘+’ (second node), you must use I(I1)
